Drinkers have been losing their heads over Guilhotina in bohemian Pinheiros since its 2016 opening. Conceived by Brazilian-born, London-raised Marcio Silva – the man behind São Paulo’s destination bar SubAstor – the low-lit, steampunk-inspired space extends to an alfresco terrace bedecked with twinkling lights. Representative of the cocktail list is ‘Lose Your Flamingo’, comprising pineapple rum angostura, reduction of fortified wine, raspberry cordial and jabuticaba vinegar, served in a tumbler atop a pewter flamingo. It made its first appearance on The World's 50 Best Bars list in 2019.
