Chef Ian Pengelley leads the charge at this upmarket Japanese-inspired restaurant. At the pass, he harmonises traditional Asian techniques with global influences and ingredients. Pengelley’s flavours are reminiscent of fine dining restaurants across Tokyo and smoky, yakitori bars in Kyoto. His decade-long tenure in some of Asia’s top kitchens has made Pengelley a master of culinary theatre and storytelling. Main courses feature a whole lamb rack presented among the smoke, and Moshio-cured salmon set atop a birch log, while desserts include an avant-garde raspberry parfait with Japanese granola and crushed almonds. The dining room, designed by architect Noriyoshi Muramatsu, is just as dramatic as the food. The latticed ceiling reflects the room’s golden light, while comfortable booths are dotted around the room, all with a view of the large open kitchen.
