A shot of steaming broth signals the start of dinner at Manzanar, where the chefs work several wood-fired grills to produce some of the best food in the country. Set in a former supermarket, the Barberos’ family-run restaurant has remained a quintessential part of Carrasco’s community with outside tables-for-two overlooking the Rostand plaza, a large indoor dining space with more al fresco seating beneath a red-and-white striped awning. From the grill, traditional Uruguayan asado (barbecued meat) is delivered with an international twist. There’s rack of lamb with citrussy Italian salmoriglio marinade, rib-eye steak with chimichurri, Milanese rump with mustard and Argentine matambrito (finely sliced flank steak) with mango salsa. Manzanar’s experimental approach to South American classics has positioned it as an internationally-renowned kitchen that collaborates with chefs like Francis Mallmann and travels the world catering for weddings and hosting private events.
