Since opening in 2018, Savarin has become one of Montevideo’s foremost fine dining institutions. Husband-and-wife duo chef José Pedro Cobas and patisserie powerhouse Sofia Rozas flaunt French technique alongside seasonal produce sourced from around Uruguay. The couple honed their skills at Relais & Châteaux's La Bourgogne in Punta del Este before venturing onto their own venture. At Savarin, vegetables are the hero ingredient, with painstakingly plated artichokes, asparagus, and heritage tomatoes accompanied by fresh fish and locally sourced meats. The braised Uruguayan lamb for instance, served with lightly grilled seasonal vegetables, is renowned for a reason. The restaurant dining room has a charming bistro feel, emanating a warm atmosphere that matches the duos’ simple and unfussy food.
