Home to Cordón’s cutest courtyard - tree-lined with a curved pink concrete bench - Toledo Bar de Tapas is a go-to for light lunches and cool, casual dinners. The menu is so seasonal it changes mid-service to accommodate fresh ingredients but some dishes have stayed the course such as the Toledo tortilla, made with confit potatoes and caramelised onions and finished with a blowtorch and a dollop of lemon mayonnaise. Seafood and vegetables make up the majority of small plates, a welcome point of difference from Uruguay’s meat-heavy grills, so you can expect light, refreshing mouthfuls of paella with Valizas shrimp, tuna cornets with wasabi mayonnaise and caviar, or zucchini ravioli with octopus. Carnivores can opt for squid with pancetta or their signature tenderloin Tataki, inspired by Japanese cuisine with nori powder and teriyaki and rice. The cellar houses a 60-strong wine list, so ask the bar for their recommendations and don’t skip dessert: the passionfruit cream-filled canutillos (cones of pastry fried in hot oil until crispy) are smooth, summery mouthfuls whose recipe originated in Bilbao.
