Those that know their Nikkei from their nigiri – or want to – fill the tables at SushiTrue, where chef Danny Sadi’s executes an edible homage to the culture and cuisine of Japan. Bright white wagasa (oil paper umbrellas) hang from the ceiling, whilst a Samurai soldier and a winking Daruma doll watches over you while you eat. It’s not unusual for Sadi or one of his chefs to deliver your dishes themself so they can talk you through the heritage and technique behind the rolls, ramen, gyoza, nigiri and maki. Instead of just offering the sort of sushi that has become mainstream, Sadi also offers an omakase service for those wanting to branch out and make the most of his know-how (omakase translates as ‘I’ll leave it up to you’) and a premium menu of panko breaded prawns with blue cheese, foie gras rolls and salmon and cheese tamago, where the filling is rolled in a Japanese omelette instead of nori.
